HOW DO I CLOSE THE GRILL LID? +

The beech handle unscrews by hand in about ten seconds, no tools. Take it off, close the lid, and grill or smoke as usual.

The steel body handles closed lid heat up to 500 °C. Use the hook to lift the basket back out, then screw the handle on to carry it to the table. The handle is heat resistant too, so with the lid open you can simply leave it on.

The bars on your grate sit 1 to 2 cm apart. Anything smaller than a steak goes straight into the coals: shrimp, asparagus, mushrooms, cherry tomatoes, cut chicken. Foil looks like the fix, but it traps the moisture and steams the food, and it blocks the smoke. You end up with soft vegetables that taste like they came out of a pan.

This is a cylinder of tightly woven 304 stainless steel. Fine enough that nothing slips out, open enough that flame and smoke go right through. Close the lid, roll it a quarter turn every few minutes, and everything inside turns at the same time.

What goes in it: asparagus, courgette, peppers, onion, mushrooms, cherry tomatoes, corn, prawns, cut chicken, halloumi, diced potatoes, tofu. Whole steaks and full racks still belong straight on the bars.

A lid that stays shut while it rolls

Twist lock, no clips and no tools. You open it, load it, turn it a few degrees and it is locked. It has to hold, because the whole point is rolling it over live flame.

What does the handle actually change?

It lets you roll the basket without putting your hand near 400 °C steel. That is the whole mechanism: a quarter turn every few minutes and the entire load turns at once, instead of you flipping twenty pieces with tongs. It screws off when you are not using it.
